The other day, I poked around the web for copycat recipes for the White Castle hamburger (not sure why: I haven't had one in years), and came upon this site. The inclusion of beef baby food kind of freaked me out, but one of the commenters claimed to have the recipe for the original slider, without frozen beef or dehydrated onion. And certainly without beef baby food.
Here is my version, which makes about 8 burgers:
1.25-1.5 lb 80% lean ground beef
1 small onion, sliced very thin
1 pickle, sliced very thin
8 hamburger buns
salt & pepper
1. Divide ground beef into 8 parts. Roll each part into a ball.
2. Put meat balls onto heated grill (on stovetop, medium heat), pressing slightly so that they don't roll. Place some onion slices on top.
3. After one minute, flip the meat balls, pressing very hard so that they turn into patties. Salt and pepper patties, then place the bottom halves of buns on top of patties, followed by top halves to warm up.
4. Cook until desired doneness. Remove top halves of buns, and flip the rest over again onto a plate. Place pickle slices on top, followed by top halves of buns.
Nikita's verdict: better than McDonald's or Burger King (whew). He actually ate 1 1/2 burgers. But really, these burgers turned out very well. They don't even need ketchup or mustard, which is a good thing because we had neither.
