I've been baking with apples so much this fall, I've lost count of the number of desserts I've made. So, I thought I would jot down the recipes that work really well for different types of apples.
Jonagold: apple pie (Cook's Illustrated 1997)
McIntosh: normally too mushy for baking, but they work well in this apple cake recipe
Mutsu: Upside-down apple cake (Cook's Illustrated 2009)
Northern Spy: apple pie (Cook's Illustrated 1997)
One variety I didn't list is Honeycrisp. That's because I would rather eat them fresh than bake them.
